They are super easy and when you get the text from a friend telling you they are dropping in..... you can whip these up in no time at all.
By the time the doorbell rings your home will smell sweet. I like to serve warm with a dollop of cream or ice cream and a drizzle of maple syrup.
Your friends will be so impressed.
Ingredients
- 1 1/2 cups self raising flour
- 3 large bananas, mashed
- 3/4 cup white sugar
- 1 egg
- 1/3 cup butter, melted
Directions
- Preheat oven to 175 degrees C. Coat muffin pans with non-stick spray, or use paper liners. I love the silicone pans..
- Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. (My kids like me to stir through 1/2 cup chopped walnuts at this point) Scoop into muffin pans.
- Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.
